As a raw commodity, shrimp prices are constantly changing. In 1982, Val Ricca put Val's Ocean Pacific at the center of New York City's finest restaurants by knowing everything there was to know about shrimp and speculating on overseas markets. This practice allowed Val to make visionary decisions about the market and control the price for his customers.
