A Note on Shrimp Sizes  

There is no industry standard for terms like "jumbo," "large" and "small."  These are just descriptive terms that each retailer uses, they decide which size shrimp will get which name.  We use terms like small, medium and large to help you understand which sizes are smaller and which sizes are bigger.  The industry standard for shrimp is to describe them by number of pieces per pound (13-15 pieces, 16-20 pieces, 21-25 pieces, 31-40 pieces).  The higher the number, the smaller the shrimp.  When buying shrimp, avoid terms like "jumbo" and look at the number of pieces per pound.

How to Thaw Peeled & Deveined Shrimp:

Take out the shrimp needed and place them in a plastic bag in the refrigerator over night, or place them in a strainer and run them under cold water until they are completely thawed. The remaining shrimp should be kept frozen in the resealed bag.

How to Thaw Block Shrimp:

  • To thaw out several shrimp, pull back the plastic on a corner of the block, place it in a strainer and run cold water over a corner of the block until you have thawed out the number of shrimp you need.  You can then completely cover up the remaining block in and put it back in the freezer.

  • To thaw out the entire block, you can put the entire block into a bowl of cold water until all shrimp are thawed.  We do not recommend refreezing the shrimp that has been thawed.

How to Peel & Devein Shrimp:

1. Peel from the legs over the back of the shrimp, 

you can either leave or pull off the tail at this point

2. Use a sharp knife to make a slit up the back of the shrimp,

this will expose a black vein

3. Using a sharp pairing knife, carefully lift out the vein

and wipe onto a paper towel

4. Rinse all the of the shrimp once you are done
