Ingredients:
• 1 Package of Smoked Andouille Duck Sausage, Cut into 1/2" Pieces
• 1/2lb Med. Shrimp, Peeled & Deveined
• 1 Green Bell Pepper, Diced
• 3 Stalks of Celery, Diced
• 1/2 of a Yellow Onion, Diced
• 1 Clove of Garlic, Minced
• 1 Can of Kidney Beans, Drained
• Cajun Seasoning
• 1 TB Tomato Paste
• 3/4 C Chicken stock
• Cooked Rice, for serving
Recipe:
1. In a Dutch oven or deep sauté pan on med-high heat, sear the duck sausage until browned, then remove.
2. Season shrimp with salt and pepper and sear in same pan for 1 minute each side, then remove.
3. Sauté celery, bell pepper, and onion until softened. Add garlic, sauté one more minute.
4. Add tomato paste and Cajun seasoning. Stir and sauté 1-2 minutes, until fragrant.
5. Add kidney beans, stir to combine.
6. Add chicken stock
7. Add duck sausage and shrimp back to pot.
8. Lower heat and simmer 10 minutes, until shrimp is fully cooked and liquid has evaporated by 1/4.
9. Serve with hot sauce and rice. Enjoy!
